Raclette
A Joy of Sharing
When you think of Switzerland, cheese immediately comes to mind. Raclette, however, is not just a dish but a ritual for friends to gather and have a good time. It offers a warm and cozy experience with the perfect harmony of melted cheese, potatoes, and pickles.
Ingredients
- 400-500 g of Raclette cheese (sliced)
- 500 g small cooked potatoes (with skin)
- Cornichons (sliced or whole)
- Pearl onions
- Salt, freshly ground pepper
- Optional: paprika, dried meat (like Bündnerfleisch), ham

Preparation
- Preparation: Boil the potatoes with their skins on and keep them warm. Slice the Raclette cheese. Place the cornichons, pearl onions, and other side dishes in small bowls on the table.
- Heat the Raclette grill: Plug in the Raclette machine and wait for it to get hot. There is usually a grill on top for meat or vegetables.

- Melt the cheese: Each guest places a slice of cheese in their small Raclette pan and puts it under the heating element of the device. Wait for the cheese to melt and turn slightly golden brown.
- Serve: Use a wooden spatula to pour the melted cheese over the hot potatoes. Serve with the cornichons and other side dishes. Season with salt and pepper to taste.
Tips:
- You can also use other melting cheeses, but for the traditional taste, Raclette cheese is the best choice.
- A cool white wine (preferably a Swiss wine) or hot tea perfectly rounds off the Raclette experience.
